Recipes



Here are two of my favorite recipes!! I need to type up the Triple Chocolate Muffins recipe...I don't have time to this second...I'll post it soon!!!

Low-Fat Banana Muffins

Cream together with beater:
2 egg whites
1 cup skim milk
3 mashed over ripe bananas

Then add with spoon:
1 cup whole wheat flour
1 cup whole wheat pastry flour You can do a combination of white, whole, and pastry-just make sure it equals 2 cups!!
1 cup sugar ( I use a sugar substitute, or half and half!)
4 tsp. baking powder
3/4 tsp. salt

You can add mini chocolate chips for a little fun. Makes 18 muffins. Try it in a bread loaf too! Spray it really good though because of the lack of fat it may stick! They also stick to the muffin wrappers when hot....if you let them cool completely then they come out perfect! These truly are delicious...you'd never know they were so low in fat!! One muffin made with sugar substitute is 60 calories. Otherwise they are 100 calories.

Bake at 375 for 15 to 20 minutes.

Skinny Low-Fat Chocolate Chip Cookies (Best diet cookies ever!!!)

Cream together with beater:
1/2 cup sugar (or sugar substitute)
1/2 cup brown sugar
2 tbsp. melted butter (I use Smart Balance)
1 egg white
2 tbsp. unsweetened apple sauce
1 tsp. vanilla

Then add with spoon:
1/2 cup whole wheat pastry flour
1/2 cup all purpose flour
1/4 tsp baking soda
1/8 tsp salt
1/2 cup mini chocolate chips

Because they are low in fat they will stick to the cookie sheets so you will need to either use parchment paper, baking spray, or a Silpat!

Bake at 350 for 8-10 minutes.

85 calories per cookie and 2.5 gram of fat! This recipe is small so you won't have all of the cookies lingering for days to tempt you!!
